OH-what was I waiting for?? Is all I have to say. They were surprisingly good considering the ingredients. Way in the back of your mouth you can taste a little bit of the pork rind flavor and that is what makes it so good.
Ingredients:
1 cup crushed pork rind
2 tbsp chia seeds
2 eggs
1/4 cup unsweetened vanilla almond milk
3 packages SweetLeaf stevia
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
Directions:
1. Crush pork rinds (I used my food processor) and set aside.
2. Beat eggs and then fold in milk, Stevia, cinnamon, vanilla and chia seeds.
3. Add crushed pork rinds and let the mixture sit for 5 minutes.
*I had to add a little more milk to make it the right consistency*
4. Meanwhile heat skillet with coconut oil spray and then fry mixture pancake style.

Those pancakes look interesting. I was looking through your recipes and thought your 2min pumpkin muffin recipe was for pancakes so I started making them and realized it was a muffin recipe (I mustve been tired). I added extra coconut milk to turn the muffin into pancakes and they turned out fabulous! I think I will have them again tomorrow, as pumpkin is so great for the skin and the body.

That just sounds so weird! I loved pork rinds when I was younger so maybe I would still have that acquired taste! You are one creative cooker!
ReplyDeleteI like spicy pork rinds and would use them to coat chicken, pork chops, etc. but can't put it in a pancake! Did you add the pork rinds for flavor or binding?
