Peanut Butter Cookies


Ingredients:
1 cup peanut butter (I used raw almonds)
1/3 cup Xylitol
1 egg
1/2 cup almond flour
1/4 tsp salt
1 tsp baking soda
1/2 tsp vanilla extract

***OPTIONAL*** add in 1/4c of bacon bits and 1/4-1/3c of Hershey's sugar free chocolate chips.

Directions:
Preheat oven to 375.

In the food processor grind up your almonds.  I added in a tbsp or more of macadamia nut oil to soften. Almond oil will work as well.

Add in the salt, soda and vanilla - keep mixing - add the Xylitol - then the egg and almond flour.

Process until mixed thoroughly.

Scoop onto cookie sheet lined with parchment paper. Press down with palm of your hand - (fork will stick).

Bake for 12 min or until slightly browned. Do not over-bake. Let cool before removing from cookie sheet.
