Cheese-Garlic-Individual-Muffin

Good Morning Folks,

It still is HOT over here - big time! I know I said I wasn't gonna blog all weekend but I accidentally made something real good and had to share with you.

I just finished eating it and still have the flavor in my mouth.

I Give you... The CHEESY GARLIC MUFFIN...
Ingredients;

1 egg, 1 tbsp of coconut oil (melted), a bit of USVA milk
1 heaping tbsp of cottage cheese - and a little shredded cheese (I used triple cheddar)
1 tbsp of each;
chia seeds, coconut flour, flaxseed, almond flour
1/2 t baking powder
some garlic powder

Instructions:

mix together in a small pyrex bowl the egg, coconut oil and milk
add in the other dry stuff
add in the cottage cheese and shredded cheese

Cook in microwave for 2 seconds, then check to make sure the center is done
if not, cook for 20 seconds more till done.

Remove and flip on your plate and slice in half and eat with a bit of Nature's Hollow sugar free preserves like I did.

This was an experiment gone AWESOME! Had a great different taste with or without the preserves.
Here I doubled the recipe and baked them on parchment paper in the oven at 350 for 10-15 minutes.
So Good you don't even need butter on top.

  4. I just made this and it really was good. I think the cottage cheese made it moist. I didn't think it tasted too garlicky and I put a good shake of garlic powder in it. It was really good with the butter and natures hollow. Thanks for another great recipe!!
