Cauliflower and egg Tortillas




I made these taco shells using Cauliflower and eggs, That's it - They were fairly easy and surprisingly good with all the fixens on top.

**Take a head of cauliflower, cut in half - put in a pot of cold water and bring to a boil for a few minutes - then drain all the water and let cool - shred (like rice) in food processor or by hand. Keep the rest in a tupperware container in the fridge.


Use 2 cups of shredded cauliflower and 2 eggs and salt and pepper to taste - mix together in bowl.

Make 6 round piles on parchment paper on a cookie sheet and bake at 375 for 10 minutes - then flip and cook for 5 more min.

Transfer to your grill to brown a bit - then cool on a wire rack - Done.
I make some sauted onion, green pepper, mushrooms, garlic and chicken with some braggs. Came out so good.

  2. Soooo you broke up the cauliflower in pieces put it in a pot and covered it with water and then brought it to a boil and then immediately drained it? Then you quickly shredded it, like rice maybe? Just want to do it right. Thank you for the recipe Rosalie!

    1. I usually cut the head in half and put it in the pot of water, bring to a boil for just a couple minutes then drain and let cool first - then shred in my food processor like rice. Yes
      Then you can keep it in a tupperware container in the fridge and use a little every day - for whatever.

  3. Hi Rosalie
    I tried this recipe today, it did not work very well for me, not sure what I did wrong, but they fill apart when I went to flip them, I managed to piece them together. Any suggestions? Thanks Hope Russell

    1. Hope I made these several times and they work very well for me. Did you bake them on parchment paper on a cookie sheet first then on a grill??

    2. Yes, I baked them on parchment paper, maybe I did not bake them long enough, I baked them for about 10 minutes & then grilled them. I guess, better luck next time, I will try again !! Thanks
