I Made the Coconut flour Pancakes...

Hello everyone,

Today is a beautiful day today. Should be around 80-85. I was supposed to go help my sister look for a new house to rent, but she is too tired from working all night at the hospital. (she is a nurse). We are going tomorrow. Her lease is almost up and needs to find a place with a yard for her 2 doggies.

Well my weight is up a couple today. Big deal!! That happens to me a lot. I usually go between 150-152, but today I am at 153. I have a feeling it is because I went to the movies yesterday by myself while hubby was working and I ate WAYYYYY too much popcorn. I am an ADDICT!! When I start I just can't stop. Well at least I don't use butter. My tummy hurt and I still ate more. haha. Yeah - I am a popcorn addict.

So this morning I made the coconut flour pancakes I got from Amber's blog yesterday.
I made 10 pancakes and ate 3. I used the Joseph's sugar free syrup and butter, but might have tasted better with Nature's Hollow sugar free preserves instead. I did put 1 truvia inside - but it would have been better w/o it I think. Other wise I give it 2 thumbs up. (recipe on the recipe's tab above)

I have stuff to do so I better go I hope everyone has a great BFC day. Thanks for listening as always and remember WWRD?

  1. I love love love popcorn. That's the biggest problem with no grains for me at this point. I love hot buttery popcorn! And I do butter mine. But I don't get it at the theater - the salt always gets me..

  2. Thanks for the encouragement on my blog! After my two weeks are up, I am definitely going back to my 2 eggs and whole grain toast for breakfast. That really kept me going much better than just the eggs (which I am getting sick of--must try the pancakes!!).

    About popcorn, omg I am so addicted to Kettle Korn. There is a place here in town that makes it and then sells it at Blockbuster - I really can not stop eating it, and I do really enjoy it. Popcorn cooked on the stove in coconut oil is delicious (with salt), and of course, I like butter on top too.

  4. I can stay away from popcorn as long as I don't smell it freshly made! I think those pancakes look pretty good and will definitely give them a try when my FT is over.

  5. I left a comment as soon as you posted, but I dont see in :( My laptop crashed tho so maybe it was lost. Anyways... let me know if you would change anything with the pancakes! Im not the best baker & it may need some adjustments.
